Five minutes you say? Yes! Sea Bass is a wonderful (not too fishy) fish. It takes 5-7 minutes to pan fry and is so delicate and light. I like to pair it with some fresh, crunchy veggies that have been lightly grilled. For a low calorie protein source Sea Bass is your go-to and it’s so quick to cook. So no excuses if you’re short on time, this is literally the fastest food you could cook. I almost feel like I’m in the Mediterranean whilst eating this. *glances out the window to a Scottish winter storm with horizontal snow, rain and hail ALL. AT. ONCE.*

2 fresh sea bass fillets
Handful of asparagus spears
Bunch of vine cherry tomatoes
1 tsp coconut oil
Zest of half a lemon
Pinch of salt, pepper, chilli flakes and parsley
(Can you see this recipe is total guesswork with no measuring?? Honestly, it’s actually easier to grab the stuff and go without bothering to weigh stuff out.)
- Place the asparagus and tomatoes on a baking tray and drizzle with a little coconut oil. Scatter some of the lemon zest, salt, pepper, chill and parsley on the veggies and place under a hot grill for 5 minutes, turning once.
- Whilst the veggies are cooking add some more coconut oil to a non-stick pan and fry the sea bass skin-side down for 4 minutes.
- Sprinkle the remaining lemon zest, salt, pepper, chilli and parsley on the fish then flip and cook for a further 1-2 minutes.
