Gingerbread Protein Energy Bites

Because normal gingerbread will never give you the Christmas gains like these little beauties! These are definitely more of an energy boost rather than a sweet treat like previous bites that I’ve made, due to the whey protein, but are delicious nonetheless. I went through a bit of a gingerbread kick over Christmas so got my festive spice blending on the go.
Once again, these took minimal time and effort and satiated any Christmas-themed hunger pangs I experienced that week.

Ingredients:

100g creamed coconut

100g dates

4 tbsp almond butter

25g scoop vanilla protein powder

2 tbsp ground almonds

1 tsp ground ginger

1 tsp cinnamon

1/2 tsp nutmeg

Method:

  • Blend the dates, almond butter and creamed coconut in a blender until smooth.
  • In a separate bowl mix the ginger, cinnamon, nutmeg, protein powder and almonds and add to the date mixture.
  • Blend again until fully mixed then roll into balls. Refrigerate for about half an hour to set before eating.
